Three-Asparagus salad

White, green and wild asparagus
served with a poached egg

Soup of the chalet

Wild sorrel , plantain,
Bon Henri wild spinach,
oxalys, and wild asparagus

Onion Soup

Flavoured with Port wine and Armagnac,
baked au gratin with local Beaufort cheese

Roasted cherry tomato salad

with garlic, olive oil, oregano,
mozzarella di buffala,
basil, confit of garlic

Braised lamb shank

served with a purée of potatoes
and celeriac, delicately flavoured
with wild garlic

Apple pie

with red berries and fruit,
blackberries and quince
